- A very close relative to kale, the mighty pechay (Chinese Cabbage) is a highly overlooked, yet widely used vegetable. Its use was popularized during the Ming Dynasty, when herbalists began using pechay for medicinal purposes. Pechay is strong in essential vitamins and minerals,
